We are looking for an accomplished Head Chef to lead the kitchen of a new Indian restaurant in Malta. This is an exciting opportunity to shape a concept that celebrates the depth and variety of Indian gastronomy while offering guests a dining experience that is both authentic and contemporary.
The Head Chef will take full ownership of the Indian kitchen, from creating menus and sourcing ingredients to managing a dedicated team. You will combine traditional techniques with creative flair, ensuring that each dish reflects the richness of India’s culinary heritage. This position requires a hands-on leader who can balance innovation with consistency, all while delivering the highest standards of food quality and service.
What You’ll Be Doing
1. Design and execute menus that highlight both regional specialties and modern Indian-inspired creations
2. Lead daily operations in the kitchen, maintaining efficiency during both prep and service
3. Train, coach, and motivate chefs and kitchen staff, building a strong and cohesive team
4. Maintain consistency in flavor, quality, and presentation across all dishes
5. Source authentic ingredients and build strong relationships with trusted suppliers
6. Implement systems to control food costs, manage stock, and minimize waste
7. Uphold rigorous standards of hygiene, safety, and compliance at all times
8. Work closely with management on promotions, seasonal updates, and private events
9. Ensure an outstanding dining experience that keeps guests returning
What We’re Looking For
10. At least 3–5 years of leadership experience as a Head Chef or Sous Chef specialising in Indian cuisine
11. Strong command of traditional cooking styles, including tandoor, curries, biryanis, breads, and regional classics
12. Background in fine dining, boutique restaurants, or high-volume establishments
13. A leader who inspires teams, maintains discipline, and drives consistent performance
14. Solid understanding of menu engineering, costing, and financial control
15. A passion for authenticity, with the creativity to adapt Indian cuisine to international audiences
16. Based in Malta or open to relocating
