We are looking for a passionate and forward-thinking Head Pizzaiolo/a to lead the launch of POCO, our new pizzeria and bar concept inspired by the creative energy of D4100—the London-based hospitality brand known for bringing people together through food, community and joyful experiences. POCO will be housed within Miiro Spittelberg, our second hotel in Vienna, opening early next year.
POCO will be a lively, modern space serving exceptional pizza in a social, inclusive atmosphere. Expect collaborations with guest chefs and bartenders, live music nights, DJ sessions at the bar, partnerships with local coffee roasters, and signature community events such as singles-only nights or community dining experiences. POCO is designed to be a place where Vienna meets, mingles, shares, discovers and always feels welcome at the table.
You'll bring this dynamic concept to life at the oven, defining POCO's pizza identity and craft. As our Head Pizzaiolo/a we want you to
* Lead poco's full pizza and bar-snack pre-opening setup in close collaboration with the Head Chef and Cluster Food & Beverage Manager — ensuring a seamless launch aligned with Miiro standards and the social dining energy of D4100.
* Build and execute an authentic pizza concept grounded in craftsmanship: artisanal dough preparation, fermentation mastery, bold Mediterranean flavours and a bar-focused food offering that express POCO's vibrant personality.
* Work hand-in-hand with our London-based consultants from Dinner for One Hundred on menu development to ensure POCO's identity is consistent, contemporary and true to the brand vision.
* Design and implement kitchen workflows, production systems and firing standards for pizza and bar snacks that deliver consistency, speed and strong identity — from dough management to oven techniques and plating.
* Manage food cost, forecasting, ordering and inventory with precision and ownership; maintain transparent, reliable reporting.
* Maintain strong daily/weekly/monthly stock controls with a focus on dough management, ingredient freshness, waste reduction and productivity optimisation.
* Lead from the front during service, shaping a kitchen culture that mirrors POCO's spirit — warm, confident, social and full of personality; embody the true craft and charisma of a pizzaiolo/a, regardless of gender.
* Recruit, train and mentor your team, teaching them technique, rhythm and the joy of the craft; ensure every pizza reflects honesty, flavour and a sense of fun.
* Champion a supportive and inclusive team environment, promoting well-being, development and pride in the role while living Miiro's values of authenticity and care.
* Ensure full compliance with HACCP, hygiene and safety standards, providing continuous training so the team can thrive confidently and safely.
* Collaborate closely with the Restaurant Manager and Front-of-House teams to deliver a perfectly coordinated bar and dinner experience.
* Build strong relationships with local producers, bakers and culinary partners to enrich POCO's authenticity and ingredient quality.
* Support Marketing and Events teams in activating POCO through guest-chef/pizzaiolo collaborations, community dinners, DJ sets, live music nights and neighbourhood partnerships.
* Embrace the fast-paced, ever-evolving nature of hospitality with creativity, positivity and curiosity.
* Report directly to the Head Chef and serve as a key creative and operational partner in shaping POCO's culinary identity.
We are looking for someone who brings
* Deep experience as a pizzaiolo, including dough fermentation, high-heat oven handling, artisanal pizza techniques and ingredient-focused cooking.
* Strong understanding of Mediterranean flavours and modern casual dining concepts.
* Several years' experience working in high-energy, high-volume kitchens — ideally with exposure to new openings or concept launches.
* A hands-on approach and commitment to leading by example.
* Calmness, problem-solving ability and a positive mindset in fast-paced service environments. Even with several pizzas prepping, cooking and going out at the same time.
* A natural sense of hospitality and a team-oriented leadership style.
* Fluency in English (German not required but an asset).

We offer a competitive salary aligned with your experience and qualifications. The legal basis for this role is the collective bargaining agreement for the hotel industry in the state of Vienna, which stipulates a minimum monthly salary of €2,492.
