Our client is seeking an experienced and passionate Food Service & Production Manager to lead catering operations at the Lihir Gold Mine site.

Reporting directly to the Site Manager, you will oversee daily food production and service operations across multiple kitchens, ensuring exceptional food quality, presentation, safety, and customer satisfaction. (5000 meals per day)
You will play a key role in mentoring and developing culinary teams while maintaining the highest standards of food safety, compliance, and operational efficiency.
Key Responsibilities Food Production & Quality
* Conduct food testing and tasting prior to service.
* Refine recipes and production methods to meet large-scale catering requirements.
* Maintain exceptional standards of food presentation and service delivery.
* Ensure consistent delivery of high-quality meals across all kitchen operations
Leadership & Team Development
* Lead, mentor, and develop kitchen teams in a multicultural environment.
* Deliver practical cookery training and ongoing skills development programs.
* Conduct performance reviews and provide coaching to support continuous improvement.
* Foster a positive and safety-focused workplace culture.
Operational Management
* Oversee daily kitchen operations and food production schedules.
* Monitor staffing, workflow efficiency, and service standards.
* Drive operational improvements and implement best-practice catering procedures.
* Work collaboratively with management to achieve site objectives.
Food Safety & Compliance
* Ensure compliance with HACCP requirements and food safety regulations.
* Maintain high standards of hygiene, sanitation, and workplace safety.
* Manage audits, inspections, and required operational documentation.
To be successful in this role, you will possess:
* Certificate III or IV in Commercial Cookery (or equivalent).
* Minimum 3–5 years' experience in a Food Production, Catering, Kitchen Management, or similar leadership role.
* Strong understanding of HACCP and food safety systems.
* Proven ability to lead and develop teams.
* Excellent communication, organisational, and problem-solving skills.
* A proactive approach to continuous improvement and operational excellence.
Highly Regarded
* Experience within mining, remote-site, village, offshore, defence, or large-scale camp catering environments.
* Exposure to multicultural workforces and remote operations.
