The Role:

We are seeking an exceptionally skilled, experienced, and highly effective Sushi Chef to join and lead within our elite Global Culinary Team. This pivotal leadership role will be based in our central kitchens and culinary development hub in Vienna, Austria, but requires extensive international travel to lead sushi operations at our high-profile events worldwide.

You will be a master of your craft, capable of not only preparing exquisite sushi and Japanese delicacies, but also consistently deliver DO&CO's uncompromising standards. Reporting to the Head Sushi Chef or Executive Chef, you will be instrumental in maintaining authenticity, artistic precision, and operational excellence, both from our Vienna base and on-site at diverse and fast-paced international events. You will be a culinary ambassador for DO&CO globally.


Key Responsibilities:

Lead and manage the sushi section within our Vienna kitchens as well as our global event kitchens, overseeing daily operations, quality control, and ensuring adherence to DO&CO's exacting standards.

Assist in the training and development of our core sushi team, establishing best practices and ensuring consistent skill levels.

Ensure the consistent preparation and presentation of a full range of traditional and contemporary sushi, sashimi, nigiri, and maki rolls with exceptional precision, consistent portioning, and artistic flair.

Oversee and verify the expert knife skills of the team for fish preparation and vegetable garnishes.

Actively monitor and maintain the highest standards of taste, freshness, and visual appeal for all sushi products served, whether in Vienna or on-site.

Lead and manage the entire sushi station/operation on-site at international events, adapting to varying kitchen layouts, equipment, and production scales.


Experience:

Proven experience as a Sushi Chef, or equivalent leadership role within a high-end restaurant, luxury hotel, or premium event catering environment.

Extensive demonstrable expertise in preparing a wide range of sushi and Japanese specialties, including advanced techniques.

Proven experience in high-volume, premium production while maintaining fine-dining quality.

Demonstrable ability to train and mentor junior chefs.


Technical Proficiency:

Mastery of knife skills and a deep understanding of fish anatomy, preparation, and aging.

Advanced knowledge of sushi rice preparation techniques and consistency.

Proficient in inventory management, ordering systems, and basic food cost control.


Communication & Languages:

Travel & Adaptability: Willingness and ability to relocate to Vienna, Austria.

Unrestricted willingness and flexibility to travel internationally extensively and for extended periods as required by the global event calendar.
