Role Description
We are seeking a hands-on Restaurant Manager to lead the daily front-of-house operation. You will own guest satisfaction end-to-end, coach and schedule the service team, and partner closely with Kitchen, Bar, and Show/Tech to deliver a seamless experience across dinner service and performance times. This is a full-time, on-site position based in Vienna.
Key Responsibilities
· Lead, coach, and motivate the FOH team (hosts, servers, runners, bartenders); set service standards and training plans.
· Build and manage rosters, shift briefings, section plans, and pre-/post-show checklists.
· Oversee floor service during dinner and show; ensure precise pacing with Kitchen/Pass and Show/Tech timing.
· Safeguard guest experience: handle VIPs, special occasions, complaints/service recovery (on-the-spot solutions, follow-up).
· Uphold product quality, hygiene, and safety standards (incl. allergen communication and HACCP compliance).
· Manage POS operations, cash-up, variance controls, and daily sales reports.
· Support inventory and ordering for FOH and Bar in collaboration with Bar Lead and Head Chef.
· Drive commercial KPIs: covers, average spend, upsell rates, table turn times, guest satisfaction scores.
· Maintain reservation flow, table plans, and waitlist management; coordinate with ticketing when applicable.
· Recruit, onboard, and develop team members; provide structured feedback and performance reviews.
Qualifications
· years of leadership experience in a high-volume restaurant, premium dining, or dinner/show environment.
· Proven guest-service excellence with strong floor presence and conflict resolution skills.
· Solid knowledge of food & beverage service, wine/champagne & classic cocktails.
· Competent with POS and reservation/ticketing systems; comfortable with basic Excel/Google Sheets.
· Outstanding communication skills (German and English); additional languages are a plus.
· Strong organizational skills, calm under pressure, and a proactive, hands-on mindset.
· Flexibility to work evenings, weekends, and holidays.
Nice to Have
· Experience in live entertainment venues, events, or hotel F&B outlets.
· Basic understanding of cost control (labour, COGS) and revenue-driving initiatives.
· First-aid/Fire safety knowledge; trainer-level hygiene certification.
